Bonnes Mares Grand Cru 2013
Les Bonnes-Mares is located just after Clos de Tart (adjoining Grand Cru) going south. It is more extensive on Chambolle-Musigny than on Morey-Saint-Denis and it forms a rectangle between the valleys of Morey and Chambolle. The basement is made of limestone slabs and white marl. It covers about 40 centimeters of clayey-siliceous soil, quite light and gravelly, brown and reddish. The slope is slight. Jurassic origin, some 150 million years ago. Traditional in thermo-regulated vats. Cold pre-fermentation maceration, temperature control, long vatting during which punching down and pumping over are practiced in an optimal way. Post-fermentation maceration at 30°C for 5 days. Aged in oak barrels for 20 months. 80% new barrels and 20% single wine barrels. The oaks mainly come from the Vosges region.
